A Vegan Foodie’s Purple Carrot Review

Last week Eric and I finally gave Purple Carrot vegan meal kit a try and I wanted to report back to all of you who have been drooling over our IG posts 😉  

Here we got vegan foodie version of Purple Carrot Review!

I will be super honest here (there is such a thing as honest media nowadays 😉 ) and say that I was VERY hesitant to try this out.  

But the hubby and I were getting increasingly busy as summer approached and increasingly bored with our meal plan staples.  So, we figured, why not switch it up?

I had looked into other meal kits but was always so underwhelmed with vegan options.  Purple Carrot was quite different.  

Our first week consisted of Avocado Spinach Quesadillas, Curried Millet and Beet Burgers.  Hello foodie dreams!  

But now to get over my other speed bump: the packaging.  This was also a turnoff for me, until I read their sustainability practices.

All of their packaging in made from post consumer products, meaning that no NEW products were made.  They are also dedicated to using recyclable and non toxic plastics.  

As a plant based company they understand the importance of reducing our wastes, implementing sustainable practices and keeping our earth healthy.

So, we decided to give it a try.  The box arrived quite quickly and everything was still ice cold when it reached our door.  

That first night we tried out the Avocado and Spinach Quesadillas right away because Eric was eyeing those up the second we browsed the menu that week.  

I was so impressed with how easy they were to make and how delicious they were.  Purple Carrot clearly puts so much time and effort into creating the most amazing vegan dishes.  

The vegan cream cheese with roasted red peppers were perfect lathered on the quesadilla and the refried lentils were something I had never had before, but is an amazing idea!

The portion control was perfect helping ensure that you don’t over eat!  

Over the next week we made the remaining dishes and again, were so pleased.

Each dish was easily made in 30 minutes or less and the flavors were on point.  There are always a couple nights a week for us where we just don’t feel like cooking or deciding what to cook.  

It was great being able to grab these already portioned ingredients and whip up a delicious, cruelty free meal.

My absolutely favorite thing about this company is how EASY it makes vegan eating.  

When I first went plant based, over 7 years ago, I had the hardest time knowing what to eat.  I wasn’t really sure how all the vegan items when together and how I could make an amazing meal out of plants.  

I would have killed for something like this to help me along.  

I talk to a lot of people who are looking to transition to vegan, but just don’t know where to start.  OR I have moms looking to help their families eat more plant based but just cannot get them on board.
